So 4th of July weekend was amazing! I had a fabulous time with my great girlfriends! It was only for the weekend wish it would have lasted so much longer! We stayed at my bestie's beach house right on the Bay it was a great way to get a way for a while and relax! Here are some of my favorite pics from the weekend! 
Hope everyone had an amazing 4th as well! 
 

I feel so very bad I have been away from my blog in what seems like forever! I did not have my computer for 3 weeks due to my motherboard crashing and it took a while for them to fix it! But since I have been away I have done so many amazing things!  From an amazing 4th of July beach trip to American Idol and all things in between I have been super busy! But no worries I am back!

1. What color best describes you and why?
Yellow because it is vibrant, happy and fun!

2. How have you changed in the past year?
I have changed by my focus. I am more aware of what it takes to get where I want to be in life which is making me focus on the smaller steps to get to the big top.

3. Have you ever had any surgeries?
Yup one and the only one I ever hope to have.

4. Why did you start your blog?
I post a lot of pictures of what I cook on my FB and get asked all the time for the recipes so I thought I might as well just make a blog with all my recipes and other fun things!

5. what are you looking forward to this summer?
Going to try out for American Idol in Charleston and then going to Nashville to try out for The Voice!\

6. Do you have any family traditions for the 4th of July?
We don’t have traditions but we either celebrate at home with a pool party and cookout followed by fireworks or we take a trip to the beach!

7. What’s something new that you’ve tried in the past few months?
Painting my toe nails bright fun colors I usually stick with the staple Red, pink or French manicure.

8.What is the perfect a/c temperature?
I keep the house at 72 degrees all year.

9. What was the last movie you saw in the theater?
Hangover 2 for my boyfriends birthday it was quite hilarious and interesting!

10. What song do you think everyone should hear at least once?
Celebration by Kool and the Gang such a fun upbeat song that says to do what we should do everyday CELEBRATE !

GOAT CHEESE, Spinach AND TOMATO STUFFED CHICKEN
SO THE OTHER NIGHT I MADE THIS CHICKEN, OFF THE TOP OF MY HEAD THAT IS Amazing! my boyfriend claimed it was the best chicken he has had in a long time and told me I had to share this on my blog , so here we go!

Preheat oven to 350
~*INGREDIENTS*~
5-6 CHICKEN BREAST
1 VINE RIPE TOMATO (DICED)
1 1/2 CUP SPINACH (CHOPPED)
1/2 CUP GOAT CHEESE
1TBSP. SALT
1 TBSP. PEPPER
1TBSP. PARSLEY
½ CUP LITE BALSAMIC VINAIGRETTE
After gathering up all your ingredients you need to put the chicken breasts in a large casserole dish. Next Grab one breast at a time and make a pocket like cut into it like shown. After all the breast have pockets ,you can put them aside in the dish.

Next you need to take all the other ingredients and mix them into a bowl. Extra tip : if you ever need a great dressing blend these into a blender, so good!
Next you need to open up the cuts in the chicken and stuff the mixture into the breasts.
Stuff that chicken like dinner depends on it! 
don't be cheap!
If you have any extra mixture just pour over the breasts . next, put tin foil over the dish and put in the oven for 50-55 min. 
It’s like a twinkie with melt your mouth deliciousness inside!

I paired this with grilled squash and a sweet potato with chopped walnuts. hope you enjoy it!
